Kaffier Lime is native to tropcial Asian countries where it is use extensively for cooking.  The leaves are glossy, deep green and have a distinct double-lobed look, they are the most used part of the tree and are typically used for flavouring Asian dishes such as soups, curries, salads, fish and other stir-fry dishes.  Young leaves are shredded for salads and mature leaves are cut in smaller pieces or tossed whole to add a zingly lemony taste to dishes.  The fruit rind is used in creating curry pastes and the zest is used to add a stong distinct flavour to a variety of different dishes.  

 

The tree grows to 2-3m, is evergreen and thrives in a warm, sheltered, frost free spot.
