GALANGAL - Widely used in Thai and Indonesian cooking, galangal is an aromatic rhizome that grows on a clumping plant similar to other gingers. Plant in semi shade in well drained soil after the danger of frost has passed and the soil has warmed up. Plant them on a mound and harvest the roots once the tops have died off or in later winter, making sure you leave some in the ground to re-sprout in the the Spring.  You can also grow successfully in pots.
